permission!

GUESS WHO GOT A BUILDING PERMIT?!
yeah, dudes.

well,
yes, the whole place IS built,
and set up,
and ready.....
but,
NOW i have permission to do the thing that already happened.
that's good news, no?
i mean,
i still need a whole other 'nother inspection,
which in it's turn is a whole other 'nother pile of loot...
but,
the progress report is as follows:
FULL STEAM, FULL SPEED, STRAIGHT AHEAD.
and that's dope.

i still need some regular-A*-sittin' chairs, tho.
really, i'd sit on the rugs, if it were me.

for a cold, crisp, windy, worst-in-a-while opener at the premier of the month,
i needed something so much MORE to make up the difference between
arctic A*-hole weather and the new hottness of Perfect Fall Days.
and that's no joke.
like, for serious, right quick, lemme just ask you:
what the motherF* is 34℉ in early september?
it's bullsh!t, that's what.
the cake helped, tho.
and homestly, a dense, moist, burly, nutty, lemon-bright blast of big action
really served to elevate the day above the low temperatures.
you want to make one?

ok
here's how:

preheat your oven to 365℉.
-
in your standatory mixmachine, cream:
1 stick + 2 T (10 T total) vegan earth balance butter;
1/2 tsp salt;
1 tsp vanilla;
1 tsp almond extract;
1 tsp lemon extract;
1 T lemon zest;
1/2 cup organic unbleached sugar;
1/4 cup brown sugar;
1/4 cup raw sugar.
yes, that's three sugars...
because they all react differently, and create a more interesting crumb-
mix well.
next, add 3/4 cup non-dairy yogurt, and whisk it to a melted milkshake consistency.
then pour in 3/4 cup almond milk;
and 2 T lemon juice.
whisk for a minute on medium,
and add:
1 cup almond meal;
1 1/2 cups flour;
2 tsp baking soda;
1 tsp baking powder.

whisk into a frenzy on high speed,
and pour the whole big bowl into a greased bundthole ring pan.
spread it evenly,
and bake that bad boy for about 35-40 minutes, with convection if you've got it,
until it's cooked through, and totally expert.
and it will be, for realsies.
let it cool for fifteen minutes, turn out onto a wire rack to finish up,
and the ice ice ICE that baby like your life depends on it.
it doesn't.
but,
it WILL taste much better if you activate some exxxtra sugary sexxiness for sure.
did i use a pinch of turmeric in one of the two glazes?
hell yes.
can you taste it?
hell no.
does it make me psyched to double down on icy icing?

too much is the right amount, man.
y'got almond extract and almond milk and powdered sugar and vanilla for one,
and lemon juice and extract, plus vanilla, and powpow sugs in the other.
