TACO TUESDAY!!

i did it.
i said bye bye to july with the right decision on my plate.
uh-huh.
soft flour fresh-to-deathness, dudes.
the first and foremost bestest way to make the third dopest thing i like to eat.
that's right.
tacos, on a tuesday, because i do a few regular-A* things, only,
i doo-doo them with panache and sh!t, like an expert.
word.

fresh homemade fire roasted tomato salsa?
so dope.
here's the recipe.
from-scratch quick-pickled mixed vegetables?
even MORE dope.
here's that recipe, too:
2 radishes one carrot three cloves of garlic one jalapeno and half a red onion, sliced,
barely covered with cider vinegar, a spoonful of raw sugar, a dirty dash of salt,
and a hard boil until the peppers turn olive-
that's when it's done, and that's all you gotta do.
nice.
and then there's that fattie-boombattie batch of tofu rancheros!
c'mon.
that's how y'boi gets busy with the big business, bro.
so,
there's lettuces, and purple cabbage shreds, and pea shoots on those flaps.
then there's black beans, too.
black beans are good for you, and they improve all the tacos all the time.
and if you have black beans, you should use black beans.
that's no joke.
AVO-F*ING-CADO??
c'mon. don't be dumb.
there's always room for avocado in a taco, neighbors.
it makes them taste better.

how about those pepitas?
yeah, man.
pumpkin seeds, fired up in a glug of olive oil,
with spicy black peppercorn cracklin's toasting in there with 'em,
and a squirt of agave over all that, to caramelize and glaze the seeds,
and make a superior set of sprankles to turn these tacos up past ten.
you know it- these go to eleven, all day long.
look a little closer, kids:

the tofu was so simple-

RANCHEROS TACO TOFU!

3 T minced onion;
1 T minced jalapeno;
3 T chopped bell pepper;
2 T cilantro stems, finely diced;
GPOP, smoked paprika, black pepper, cayenne pepper, oregano,
cumin, ground coriander, and nootch, ALLLL to taste;
1/2 lime's juice;
...you know how you like your spices, man.
don't be afraid to taste it, and adjust your vibes.
1 scant cup fire-roasted tomatoes;
1/2 block exxxtra-frim tofu, cubed.
guys,
all that in a hot pot with a glug of oil?
perfecto.
y'just simmer it until everything is the same, and it's all hot,
and ready to rock your socks, or bare feet, or peg leg, or whatever.
f'real f'real, tacos need a spicy somethin'.
don't make 'em boring. that's gross, and lazy, and not invited.
and do NOT forget the limes.
if you do, you're the worst, and you have to leave.
that's a thing.
