how many cookies can i eat at once?

oh, how i missed 'em.
and these were seriously expert.
maybe more so than usual even.
i mean it.
maybe it was just the long absence that made my heart grow fonder?
ha.
i dunno.
but, here's what's happening:

preheat your oven to 375℉
-
cream together:
1 stick (8 T) vegan butter;
1/2 tsp salt;
3/4 cup brown sugar;
1/4 cup sugar;
2 tsp vanilla;
1/2 cup unsweetened coarse-ground dried coconut.
mash that up, and stir in:
1/2 cup unsweetened applesauce;
2 T agave.
stir it again, then add:
1/3 cup oat flour;
2 cups king arthur flour;
1 tsp baking soda;
2 tsp baking powder;
10 oz vegan chocolate chips .
mix it allll up,
and form 2" balls on a baking tray.
give them 12 minutes in that oven, and let 'em cool.
now, on their own, just like this, they're incredible.
but with chocolate icing-
that's vanilla, cocoa, powdered sugar and s'milk-
they go to eleven.
and then, with rainbow sprankles???
c'mon.
if you ain't with that, you ain't sh!t.

the days are filling up fast.
summer isn't here yet and it feels half over already.
plus, i've got the F*ing heat on, four days into june-
so it also feels like it may never even start.
that's confusing.
and i don't really like it.
but,
i'm taking the time i have to work on relationships.
it was that or learn to play an instrument,
and i feel like maybe i need people more than i need another place to sink my time.
besides,
i've got a banjo and a concertina and four ukeleles and fifteen harmonicas
i already don't play, so maybe it's a better idea to make something happen
with folks who can interact with me and mine.
we'll see.
it's over before i's begun,
or it's never gonna start,
or whatever-
but i'm still heading into every day like it's a lottery win,
random chance and fortuitous circumstance
colliding and making a little magic happen in mundane ways;
never quiet, never soft.....
