HAUNTED

cupcakes!!
these were probably the BEST chocolate cupcakes i've ever made.
no joke.
soft.
rich.
fluffy.
moist.
sweet.
site-specific.
situationally appropriate.
sprankled the F* up.
and stabbed through with hallowe'en cheer.
yup.

seriously, though.
there's coconut frosting on top,
white as a skin to hold the spranks,
then orange for the season, obvi.
how expert?
SO expert!
all you really need is the recipe, and you'll be on your way to the best damned cupcakes ever.

CHOCOCUPPIES!

preheat your oven to 350℉

in a stand-upright mixer with the whisk on,
cream:
1 stick softened vegan butter (8 T);
1 cup sugar;
1/2 cup brown sugar;
1/2 tsp salt;
2 tsp vanilla;
1/4 cup cocoa;
1/2 cup vanilla non-dairy yogurt.
whip that up until smooth,
then add:
3 fat T of tapioca flour;
2 2/3 cups king arthur flour;
2 tsp baking powder;
1 tsp baking soda;
1 cup non-dairy milk.
mix completely through and through to form a fluffy batter,
and spoon it evenly into prepared papers in two muffin tins.
this is a 24 cupcake kind of a thing, guys.
bake them for 30 minutes and get read to get excited all day long.

when they're cooled you ca decorate them however you want-
i opted for that coco-loco-nut frosting for even MORE big flavor.
that's 1 stick of vegan butter,
3 T pulverized unsweetened fried coconut;
1 tsp vanilla;
3 cups of powdered sugar;
1 T vegan creamchee';
1/3 cup non-dairy milk,
whisked all together to form the superfluff for your face.
i don't always make the best thing ever,
but when i do, i reeeealllly do.
these are the TRUTH.
more than ever before.
i think it's because i was so excited to span hallowe'en with the team, y'know?
everybody gets excited,
and we all had a great time.
that's no joke.
i was grateful for the time we had,
even though i was coming down with some hella big sickness.
i paid for the good time with a real bad time the next day,
but it was all the way worth it, for sure.
and the cupcakes?
they went to eleven, and kept right on going.
eat more treats, play less tricks, and make november pay in blood for all it's bullsh!t.
these are the new rules for the next four weeks;
never quiet, never soft.....
