CREPERIE!!!

ohhhhhhhh, sh!t!!
hey there, neighbors...
guess what i did yesterday?
i went outside and hung out.
i did.
and it was great.
but,
before that got underway,
i needed to get those plant-based metaphoric eagles' eggs nutrients,
to fire up the engines, stoke the cast-iron-caged hot fire furnace in my chest, 
and get my waterlogged body ready to recharge the batteries 
under the vaguely familiar yellow glowing globe in the sky.
yuuuuup.
the sun was out, the sky was blue, and it was beautiful, just like my breakfast.
word up.
and breakfast, on days OFF has got it going ON.
that's no joke.
on the really real, a powerful pump-up of plant-based prettiness always gets me psyched.
this particular batch of large-caliber activation had me feelin' especially expert.
y'know why?
because too much is the right amount,
and i am the only one who gets to decide where the line is.
the line?
the one that shouldn't be crossed, because it's dangerous.
SIKE.
i'll go to the hospital with exploded insides on my outsides before i chump out
on the level eleven shark-gluttony that gets me out of bed every day.
hahaha.
(that's the truth, tho.)

first off,
lemme tell you about the hash brown game up here.
it's tight.
molto tight.
crazy super-elite exxtra-tight.
and the secret is in the shred.
yup.
y'gotta salt up your peeled potatoes,
and y'gotta add those super-thin onion strands.
then,
y'gotta drain the holy water from the starchy shrapnel,
with hard squeezes and firm grabs, until they're as dry as they're likely to get.
that's when the crisp happens, buddy.
for real.
i've been on a form-fit circle-shape press, lately, and i think i like it.
plus, when you fry 'em up, and tey're all crispy and in-shape?
that's DOPE.
i prefer to black pepper and paprika the tops,
and then add the accoutrements to really take it all even higher.
guys,
arugula? sharp!
scallion? spicy!!
sriracha? expert!!!
MORE exxxtras is even better than a lot.

crepes are SO fresh.
these jauns are chickpea flour and buckwheat flour. mostly,
and that makes them exxxtra tasty.
here's the rundown:

3 T chickpea flour;
3 T buckwheat flour;
1/3 cup a.p flour;
dash of salt;
2 tsp flax/chia meal;
1 cup non-dairy milk.
^that's it^
stirred up and rested a little minute,
before being swirled around a hot pan.
so simple, but so delicious.
and what's a crepe without an elite filling?
well, actually, it's just a flat pancake, which is still pretty good-
but rules is rules, guys,
and that meant big B activation was on the schedule of events.

tofu scrambo was there, and it was righteous, too.
that's 1/2 block exxxtra firm 'fu,
with GPOP, nootch, a dash of salt,
turmeric, black pepper, and a little smoked paprika, just to pump up the volume a bit.
...DOPE.
and raddicchio, and pea shoots, for crunch and power,
plus a whole mess of grilled tomatoes.
red and gold minis are the way to go here.
they cook faster, and look cooler than a big fat dumb regular tomato.
that's the truth.
with perfectly ripe avocado,
shredded red onion,
and cilantro, too.
a few hemp heart sprankles,
and tahini drizzle for that good-good.

i had a day off that almost felt like one.
why?
oh, well, it's not what you think....
crabtree, my terrific and terrible terrier, and i,
walked all over the streets ad the hills, for hours upon hours,
bringing joy (i think) to strangers on our travels through the woods, roads, 
and villages where we reside.
mmhmmm.
i've been working longer, and leaving home earlier, 
and generally being preoccupied with some next-level responsible adulthood stuff. 
yeah.
and while it's necessary that i do it all,
it's still a real bummer to shorten the time i have to dedicate to my favorite little dude.
therefore,
on the first day in recent memory that the weather wasn't a total A*-hole,
we headed outside to hang out and see sights.
oh, i should've done yard work.
absolutely. 
there are probably about a billion things i should've done....
but i took good care of my friend, instead,
and in return, he slept like a boulder, immovable and indifferent, all night long.
nice.
it's the little moments like that which make the days seem fuller
than all the cooking and baking and planning and writing and running around combined.
i AM grateful for what i have,
but i can't settle for less, because then i may miss out on MORE.
it's all really happening, man-
that's the whole point;
never quiet, never soft.....

SPIRAL SCONES!!!

oh MAN!
i sure do love a good scone.
that's the honest-to-goodness truth.
and scones,
while not the most popular item with most people i've met,
at least,
in the woodsly goodness, anyway,
where tastes tend more towards energy drinks and doritos for breakfast.
ugh.
however,
in MY house, scones get full marks,
and i regard them as top notch treats for my face.
lately,
i've been using a slightly modified recipe,
relative to the old way, which is still damned good, for sure,
but not quite as magical and mystical and wizardly as the new hottness.
but, isn't that always the way?
so,
with creativity on the wane, and hunger at a high point,
i got myself together,
and i got after some scones....
only,
i couldn't bring myself to phone it in.
nope.
that's just not me, man.
so, i mixed the flour(s), and i folded in the wetter bits,
and then,
just to keep it real,
i split it in half,
and added a whole mess of double-chocolate hot cocoa to one side.
yup.

i needed that.
just chocolaty enough to seem like cake,
still sconed the eff up through and through,
and definitely a little ray of sunshine in an otherwise bleak day.
awwwwwwww.
it's not like that, neighbors.
the weather was cold as heck, and darker than evening,
so i was wet and chilly from dog duty,
and the hope for sun was foolish, if present at all.
so i made my own.
and that's expert.
because (and you may not already know about this) scones make sad mornings happy.
real talk.
a touch of agave, spread on top of each gave them a touch more golden goodness,
which made them a whole lot more awesome.
i mean it.
they're fluffy;
they're flaky (you can see that);
they're deceptively smooth,
and they're eminently eatable.
i am glad i stepped up to the stove and made something.
i'd have hated myself if i hadn't.
here's how you too can get involved in something awesome in the a.m.:

DOUBLE-LAYER SCONE SWIRLS!
-
in a large bowl,
cut in:
1 stick (1/2 cup/ 8 T) plant-based butts;
3 T vegan creamchee';
1/2 tsp salt;
2 tsp bakey powder;
1 tsp bakey soda;
1/3 cup tapioca flour;
>1/2 cup sugar (i did dark brown and raw)-
when that's all one chunky messy mass,
add:
1/2 cup vegan sourcream OR 1/2 cup unsweetened applesauce;
2 tsp vanilla;
1/2 cup non-dairy milk.
stir that up, and begin to fold and turn and fold, until it's all one thing.
split it,
and in one half add 4 T cocoa mix, (or just plain old cocoa or whatever),
and fold the sh!t out of it until it's all chocolate brown.
mmmmm.
roll both pieces out to about 1/4", in a rectangle,
and finish hand-shaping them to match-
in retrospect, one should've been longer. doesn't matter which, really, baker's choice,
stack em on on the other (um, stacks implies that, i guess)
and roll them into a log.
cut that fat loaf, seam side down, into a dozen medallions,
freeze 'em for 15 minutes on a cookie sheet,
smear a little agave or maple syrup on each one, just a few drops,
and bake them,
at 410℉,
for 25-30 minutes.
voilà!
you've got morning-time (or whenever-time) fantasy exxplosions ready to be devoured
and devour them i did.
i had to.
i was so hungry,
and i had so many feelings to smash down deep under that chocolate layer.
mmmhmmmmmm.
it worked,
and i survived a big day of big and small and simple and super-F*ing complicated tattoos.
damn.
it might've been much worse, had i not had those treats to see me through.
whew.

CRUMBCAKES!!!

so, here's a cool little something that happens every so often around here-
when it gets very rainy around the Folk Life & Liberty Fortress,
the internet doesn't work reliably.
nope.
huh?
oh, i know, right?
that seems like it shouldn't be a thing.
...but it is.
that's just one more quaint rustic quirk of the woodsly goodness.
modern conveniences are intermittent on the best of days,
and on the worst ones they're just absent altogether.
ugh.
i lived a good number of years without the internet,
even if only because it was relatively new, i was just a kid,
and my family didn't give a sh!t about having it.
still,
i survived then, and i survive now....
although the amount of wifi data streaming i utilize is both gargantuan and perpetual.
that's no joke.
anyway,
this in-and-out connectivity is becoming a nuisance,
and my morning has been upended and derailed as a result.
time's tickin' away, and i'm over here trying to write about yesterday's news.
damn.

i made three coffeecakes.
uh-huh.
three is a magical number,
and coffeecake is a magical food.
as a matter of fact,
it's so magical, i made it to celebrate, in absentia, my homeboy's berfy day,
and i even lit a candle an' that.
awwwww.
i'm a fan of birthday times, as you may already be aware.
which is why i was celebrating,
by myself,
even though my broski is far away in dumb wyoming.
yup!

without those sugary crankle sprankles, you ain't really gettin' it AT ALL.
i told you about the candle, and that was no joke either:

here's the thing-
i had one big bowlful of batter,
and three smaller springform jauns ready and willing to receive a good filling.
that's great news, really,
since too much is the right amount, y'feel me?
and three cakes means three streusels.
and that's a great idea, isn't it?
you be it is!
so,
let's get into the details,
and get you on your way to getting a good ol' megadose of dopeness for your A*!
word.

COFFEECAKE!!
-
preheat your oven to 375℉
-
in medium bowl, combine:
1 stick (8T) vegan butter;
1/2 tsp salt'
2 tsp vanilla;
3/4 cup sugar;
1/4 cup light brown sugar;
-
whisk in:
1/2 cup unsweetened applesauce;
1 cup vegan sourcream (i repped the tofutti brand, and it was awesome);
2 cups + 3 T flour;
3 T tapioca starch;
2 tsp baking powder;
1 tsp baking soda...
^ stir it all together to make a thick-as-they-get batter,
and spread it halfway up all the greased and floured pans, man.
now,
in that same bowl,
combine:
1/2 stick butts;
1 cup flour;
1/4 cup powdered sugar;
2 tsp cinnamon;
^grind on that with a fork or pastry cutter until it's all one cohesive clumpy crumble.
....and spread that on top, buddy.
obvi.
i had some chocolate chunk granola, which i basically pre-baked streusel,
and i dropped that down on one too.
AND,
just to keep it real, i used oats, and brown sugar in a whole other 'nother other one.
MORE is better, but MORE isn't just quantity, it's also variety.
i like a little freaky freak-it-off freshie-freshness and flair in my cake game.
there's nothing wrong with that.
i baked them for 30 minutes, and the small (5") guys were great
the bigger one needed a bit longer, though.
(y'know how i knew? yea. i tested the center, kiddo. smart)
...
when i got back from my very wet, wholly unrewarding walk with crabtree,
who was as irritated and harried as we hurried by the sucking suckhead
mosquitoes who pursued us,
i helped myself to the comfort of crumble cakes,
and that made me feel much much better.
i even made a wish,
although i think i might be jussssst this side of too-cynical for that stuff.
bummer.

i doubt the connection i have with the outside world is going to last.
the water has attentuated my ties to virtual interactive participation
weird.
that's not at all like my real life.

wait.
there are berfdays all the time.
there are responsibilities, opportunities,
and F*ing terrible terriers that don't care what day it is
today, it's tattoos all dang day, and all of them will test me in ways
i'm wondering why i'd even allow.

because it's all really happening-
the toughest times, the longest days, the winding road to the bottom of the hill,
and it's way to wet, and too cold
to pretend to be cheerful while i whistle (like a falling bomb) while i work;

THIRTY-SEVEN!!

today is the day.
yup.
the big day.
the berf day.
the one where my very best buddy,
my ace numero uno homeboy,
my infused and transcendent blood brother from beyond the borders of paternity,
the dude i like the best,
turns another 'nother all-the-way official year older.
yup.
this is the day when that happens.
and here's the thing-
he HATES berfdays.
ha.
a whole lot.
but,
he's got his lovely wife and his beautiful toddler to keep him from ignoring it,
and i've got a public forum to announce it on, too.
so,
HAPPY BERFDAY TO THE CUCCH.

mmhmm.
damn, i really love that guy.
he's basically a better version of myself,
and i see the traits that i wish i had more of present in abundance in him.
i couldn't have asked for a better existential other,
and i have to say,
i miss him more than just about anything.
i am very grateful for our best-friendship and the genuine brotherhood we've chosen.
he deserves all the best things, all the time,
because he's good and kind and honest and true.
that's the truth, and that's all there is to it.

yup.
and that's where all three of us friends are hangin' out,
and waitin' for y'all to get on board or get outta town.

i'd reallllllly recommend you try a slice before you decide to leave us alone.
i'm fairly confident you'll be surprised at what you feel about coconut,
and blueberry,
and me,
after the first bite melts into your synapses
and stimulates sense receptors you didn't even know you had.

before i get into all the day's baking,
i have to be honest with myself, and in turn, with you:
i'm running molto low on creativity.
no foolin'.
i make and bake a whole lotta everything;
and now,
hundreds and hundreds of treats and eats later,
i'm feeling a little used up.
ugh.
it happens from time to time,
and when it does, i dig deeply into my tastebud archives,
and pull out some flavors i know might shock me back into full red-alert treat mode.
i was shocked at how much i like this cake,
but that was then, bro,
and now,
i'm in a grey, rainy haze, wondering just what the eff i should make next.

ANYway,
in the meantime,
i DO have this mutha-'ucking moist and fluffy fresh-baked big action to munch up on.

but this?
this was a pleasant and most welcome one.
kids,
it has ALL the purpleberry fruit hottness,
ALL the coconutty buttery good stuff,
and also,
ALL of the most superlative softness.
like, SO soft. and SO tender, and SO nicey-nice for my face.
yuuuuuuup.

it's like this, that, and this:

BLUEBERRIES AND COCONUT AND CAKE!

preheat your oven to 350
-
in a medium bowl, cream up:
1 stick (8T) plant-based butter;
1/2 cup organic cane sugar;
1/2 cup demerara sugar;
2 tsp vanilla;
1/2 tsp salt;
-
add in, and stir well:
1/2 cup coarse-ground unsweetened coconut;
1/2 cup medium flake  unsweetened coconut;
3/4 cup non-dairy yogurt;
-
then. whip in the dry ingredients:
2 cups flour;
1/3 cup tapioca flour;
2 tsp bakey kapow;
1 tsp bakey soda;
-
and finally, stir in, and aerate with a vigorous spatula-spinning wrist tornado:
1 cup non-dairy milk.
-
what do you get if you've done it right?
you get a springy, spongy, airy, light and tight coconut exxxplosion for your face.
and that's expert.
but,
that's not all there is to it.
nope.
before you bake it, for 35-45 minutes
you've got to grease up your pan, and add 1 1/2 cups of frozen bloobs to the bottom.
yuuuuuuuuuuup.
it's upside-down, bro.
c'mon.
i also sneaked a few teaspoons of powdered sugar on 'em,
because too much is always the right amount.
that's right.
i also prefer a single layer springform situation.
i feel less fat and filthy tuning up a prime-level cake.
it's a cheap psychological trick i play on myself,
but, it works, so i work it for all it's worth.

once that massive magical medallion is cool,
and flipped-over,
(it's STILL upside-down, duders)
it's time to decorate.
now, i would like to mention that frosting and i have a very turbulent relationship.
no joke.
i don't want to measure anything.
but, the results can be preposterously unpredictable when i don't.
hmmmm?
oh, well, i rolled the dice this time, and came up a winner.
fortune favors the bold far more often than frosting does.
believe that.
but, that's coconut creamchee' frosting,
and then, coconut-freeze-dried blueberry-laced creamchee' frosting, too.
WORD!
basically,
it's < 3 T butterish to every cup of powdered sugar,
plus, almost 2 T of non-dairy creamchee',
which really just faciliatates the need to use less 'milk,
as it's no binder, but more of  heavy semi-liquid.
weird?
a little.
but, with a splash of 'milk, and a few tablespoons of finely-pulverized coconut,
it makes for one FEROCIOUSLY FRESH-TO-DEATH FROSTING.
and when the powdered freeze-dried berries are added?
expert exxxplosive flavor combining is one hundred percent happening right away.
yuuuuuuuuuup!!
enjoy this cake.
it's the right side of the coin to call, for sure.

but it sure does feel like i'm standing still.

i'm glad i've got the time and the energy to complete the tasks i volunteer for;

'ZZATURDAY NIGHT!!!

we're a few days into june, already-
oh, it's cool, you'd never know it....
i woke up to 39℉ on the thermometer this morning.
yup.
june in the woodsly goodness sometimes has temperatures that start with a 3.
yuck.
however,
when it comes to magic numbers, three usually has got it going ON.
and while june the third was going on,
i found myself going OFF on a trio of expert righteous vegan pizzas,
all for my fat F*ing face!

yuuuuuuuuuuuup.
i mean,
who cares that every day has been a brutal barrage of big action,
and busy business, and tons of flippin' dudes hanging around?
not me, neighbors.
nope.
i'm too caught up in all that i expect from myself every day
to get too caught up in just how tired i am by then of them...

i do find myself waking up in random non-bedroom places
throughout the Folk Life & Liberty Fortress...
so,
either i'm far more exhausted than i'd prefer to acknowledge,
and am literally falling asleep whenever i stop moving for too long;
or,
i'm in full-blown fight club alter-ego mode,
and am really letting that wild mr. albert loose each night to wreak wreck
on the forest and the trees.....
hmmmmm.
i don't feel rested, but that's not conclusive enough.

ANYway,
i've been killing it at work.
or at least,
i've been fighting each day to a standstill;
leaving with those movie checks, and mangled fingers,
and the grim satisfaction that i did all there was to do,
and left nothing for the ride home...
yeah.
i do that, and then you know what happens next, don'tcha?
uh-huh.
it's got to be PIZZA.
obvi.
plus,
i already showed you that up there^^.
so, like, c'mon, man, let's get it together and talk about just how dope pizza is.

guys,
three pizzas!!
that was just about the best idea i've had in days.
no jokes.
and here's the thing-
i haaaate instant dough.
time is of the essence, sure;
but it's also essential to take the time you need to make the dough your deserve
personally,
i prefer a little flavor developing activation in my crusts, kids.
and with no treats on the agenda, and minimal minutes to get frisky with my
flour and water and salt and yeast and love an' that-
i just made that sh!t in the morning,
and let it get rowdy all damned day in the fridge.
yup,
no bulk rise, just a cold rise/proof for seven hours.
dudes,
it was a splendid crust, too.

PIZZA DOUGH v. 3.3!
-
in the big bowl of your stand mixer, fitted with a dough hook, combine:
1 1/2 cup a.p. white flour;
1 1/2 cup semolina flour;
2 tsp salt;
1 1/2 tsp wheat gluten (for maxxximum no-rip stretchability);
3 T olive oil;
1 pkg fast-actin' yeast + 2 tsp raw sugar,
dissolved in 1 cup warm water;
(and a little more warm water in reserve, just in case)
beat it up for five minuteson high, until it forms a sticky wad of wonder-
-
cover it, refrigerate it, and come back later to get awesome with it.
...that's all you need.
i had my oven on the crucial convection setting, circulating superheated air
at about 490℉,
while i let all three of my hand-tossed, stretched out circles rise a bit on the countertop.
yup.
that means you'll get three 10" pizzas from that dough.
and that's great news,
because i had a hankering hunger for three different sets of circumstances.
real talk-
MORE pizza is always the right number of pizzas.

custom from-scratch exxxtra-nootch-boosted creamy cashew-garlic chee' !!
crushed tomatoes! daiya mozzarella!
fried garlic sprankles!!!

and then, to turn it up to eleven,
i got those fresh basil leaf upgrade jauns, as well.

sometimes, when it's pizza time, i have to make the house favorite,
even if i'm the only one having it.
deliciousness doesn't care who's around to experience it.
but,
this pizza is always the TRUTH:

kaBOOOOOOOM!!!
those seitan-broth-braised brussels are firm but soft, with powerful flavor,
and slightly crisped edges.
mmmmmmmmm.
the caramelized onions are my favorites.
shredded vidalia, all slippery sweet....that's good stuff.
and those little cubed up barely browned baconish bits bring the smoky pink to the thing;
i like that.
with daya mozz' and crushed tomatoes,
AND those fried garlic spranks, too?
come on, now, kiddo.
pizza like that is pretty much what everybody needs in their life.
and i still managed to make it even better!

you see there's raw righteous radicchio ribbons, too, right??
heck yes that's what that is homie.
too much is the right amount!
i don't know if i've ever mentioned it before,
but,
I LOVE PIZZA TOO MUCH,
AND I LOVE TOO MUCH PIZZA!!!
mmmmhmmmm.
which is why i'm delighted to declare that the obscene scene stealer of the evening,
the runaway breakout star of the show,
the burly bombshell that brought the whole house down,
was this white mountain white pizza,
with ALL the best veggies on top:

WU-TANG, son!!
thin-sliced roasted potatoes, over that creamy custom cashew chee'-
it's the basic rinotta/underchee' recipe, thinned with oil and 'milk,
a punch of nutritional yeast, and a shake of cayenne.....
it's very expert, and that's no joke.
braised broccoli, soft enough to bite into easily,
but firm enough not to turn olive green and gross.
that's the best.
asparagus? yep. thin late season spears, sauteed in oil, tender, with 0% mush.
yum.
red and gold grape tomatoes got it poppin',
and grilled leeks took it even further.
the garlic did what it does,
and a handful of minced-up daiya mozz' helped a whole bunch, too.
then, just to assure my mouth of a maxximized freak-it-off flavor exxxplosion,

THAI FRIDAY!!!

holy smokes!!
i made a pretty special meal,
and i felt pretty special eating it.
also,
i  felt like a gluttonous shark in a feeding frenzy,
but that's nothing new.
i have a particular mode of mealtime management-
it's a two-parter:
1. too much is the right amount.
2. faster and more furious is the only pace at which to appreciate the meal.
so, i ate a lot, with all haste, as time is always of the essence,
and the second helping on the stovetop wasn't going to stay hot forever.
rules is rules, neighbors,
and one of 'em is:
you stay until the thing is done.
sorry quitters, but if you can't hang out with expert excess,
you very simply will not be invited back.

tossing a whole mess of stuff in a coconut-oiled pan,
and then crossing my fingers had me pretty pleased with myself.
also,
i kind of figured i'd eat whatever the results were anyway,
i'm just super-psyched they were F*ing expert.
let me begin by saying my sauce game was level eleven fresh-to-death.
no joke.
here's the recipe:

SUPERIOR SWEET AND SOUR SAUCE!

3 T mae ploy sauce;
1 T sriracha;
1 tsp red pepper flakes;
2 tsp chili-garlic paste;
2 T rice vinegar;
1 T soy sauce
1/2 tsp ground coriander seed;
1 tsp ea. GP and OP;
1 tsp agave;
^ that's IT!

so,
let's say you've got coconut oil, and half a block of superfirm tofu, cubed up,
and fried until golden.
that's good news.
but,
then maybe you've also got a couple cups of broccoli,
and half a swet onion,
and an orange pepper,
and two cloves of sliced garlic,
plus minced red chilis and jalapenos, too.
what then?
well, first, take the tofu and put it aside for a bit,
then you throw all those veggies in the pan, man.
c'mon,.
that's obvious.
give 'em a few minutes to sizzle,
throw in a cup and change of fresh, wet, tart, amazing pineapple,
and then douse that SAUCE over all of it,
cover it, and give it one more minute.
what happens next?
you get to taste steamy, dreamy, hot, sweet, and spicy, all at once.
that's nice.

1/2 cup fresh thai basil get stirred in,

they'll wilt right away,

but with lime juice, and unsweetened, unsulphured flake coconut added while cooking.
the name of it is the thing of it, too.

basil garnishes? ok.
mint? maybe just a few tiny leaves.
scallion sprankles?
yes!
toasted cashew?
heck yes!!!
sliced jalapeno?
why not?!
a dash o purple cabbage to make it even prettier?

i only used lime juice to activate them, and i'll be honest,
in addition to all that bright clear clean leafy flavor,
the high note of citrus sexxxiness was all they needed.

there's a pint of fresh, decapped strawberries, twirled around for added expertism.

RABBIT REDUXXX!!!

y'gotta have a treat for the first of the month, man.

i know it.
...and i do it,
because i'm the one who decreed it.
and this month?
this month calls for some superfancy unnecessariness.
yup.
i'm activating the exxxtra hottness,
to counteract the pervasive and literal lack of hotness.
dudes,
it's only been fortysomething℉ every flippin' damned day when i wake up.
that's cold for june.
and generally speaking, there's very little meat on my bones,
so warming up is hard to do.
the woodsly goodness can really be a sunovab!tch, neighbors.
that's real.
the thing of it is,
i can adapt, or at the very least, endure.
so, i'm wearing a hoodie indoors, which is not rad,
but,
i'm also eating expert boomfire elite tart magic.
and that's better than being warm by a mile.
yeah.

i'm chilly every morning and every night,
but i'm still keeping it real in this kitchen regardless.

there's sugar and vanilla and lemon and almond aplenty, keeping that jammie-jam
all sorts of sweet and neat.
and the crust?

and i'm gonna tell you how to make it.
riiiiiight.......NOW:

in your trusty food processor, combine:
1 1/4 cup almond meal;
1 1/4 cup flour;
3/4 cup raw sugar;
1 tsp vanilla;
1 tsp almond extract;
1 tsp lemon extract;
1 stick (8T) plant-based butter;
3 T vegan creamchee';
lemon juice enough to make it all barely stick together.
pulse pulse and pulse it all up,
and then wrap it,
refrigerate it for AT LEAST an hour (overnight is better),
and then, and only then, should you heavily flour a work surface,
and roll this crumbly complication out for tartifying.
yeah!
listen, friends, i rolled out and cut out that lattice-top,
but i ALSO froze it before i slid it in place atop the berries.
uh-huh.
the dough, being equal parts crumbly nuts and wheat,
wants to fall apart a little bit, so, steps were taken to prevent the collapse
of all things crusty.
it's a delicate operation, but i think you're up to it.
and that star border?
i like stars. it's that simple.
there's microplaned lemon zest and raw sugar all over the surface, too.
that's a mandatory addition.
if you don't do it, you're demoting yourself to subpar-treat clearance,
an you'll no longer have access to all the flavor.
and MORE flavor is always on the list, right?
F* yeah.
too much is the right amount.
don't settle for less.

that's the other half of the whole point.

those berries were essentially passive in preparation,
which was pretty good news, since i had my hands full with that dough...

12 oz of frozen raspies;
1/4 cup sugar;
1 tsp vanilla;
1 tsp lemon extract;
1 tsp almond extract;
1 T lemon zest;
2 T cornstarch-
heated up, on the low, until it all married together,
and thickened up slightly.
that's it.
allowed to cool, and spread out inside the crust.
c'mon.
you could make that happen in your sleep!
so, make that happen.
it's good for you.

listen kids, if you don't know what a sexxxy golden crust looks like,
i don't think we can hang out anymore-
bake it until it looks like it's supposed to....

i'd also strongly suggest you let it cool,
or that slippery butterbomb will slop around and bum you out.
however,
with a little patience,
you'll have a great reward awaiting your whole heart, and your mouth,

we went out with a big bang, buds.

you were cold, you were wet,
you were extremely off-putting,
and you were really kind of uninspiring in just about every way.

but it sure seemed as though you might've been taking something out on me.
like, specifically.
that's not cool.
but,
the grand finale was expert,
even if those final moments had us in the dark dark dark
of an unholy hailstorm maelstrom that necessitated the use of the big indoor light,
despite the hour being more than reasonable for natural sexxiness to shine through.
yup, and also, nope.
awwww, man.
nature wins,
and she shut me down on the good light just as my superior dinner action was complete.

2 T rye flour (i used the darkness);
2 T crushed flax.chia meal;
salt;
black pepper;
1 1/4  cups 50/50 non-dairy milk/water.
^ you may need more water when the binders bloom,
.......so add it in, dummy. jeez.
swirl a scoop of that runny, funny watery batter around in a very hot pan,
lifting the pan, and twirling it so the circle of spreading crepe-yness is even,
and let it cook until it's dry on top, give it a quick flip,
and another 30 seconds on side two,
and VOILA! you're making crepes.
how many does that make?
i dunno, how big are you making them?

and settled down to de-water themselves in a colander for a bit.
there's about 4 T thinly-shredded red onion in there, too, for maxxximum flavor.

y'gotta squeeze the ever-lovin' livin' liquid from 'em,
or they won't get crispy, 
but the good news is that the fibrous strands want to weave together,
so you can shape them into circles, and they'll stay that way when you fry them.

and plenty of high heat to crisp their shells into the perfect caramel crunchiness

and MORE waffles was a great idea.
also,
those hempsters in the 'fu-scram' were, too.
no crunch, just bulk, and in the very best way i could've hoped.
.....it's ALL really happening,
and whe  it has to end, like may most certainly HAD to,
i'm glad it went out with a prefect meal.

today is the day, 
and all the pieces are in place.
good news/bad news:
i'm booked most of today with some dude,
which means that there will be movie checks,
and yet, i'll be s.o.l. on meaningful connections;
we'll see if the night somehow improves the premier of june;
never quiet, never soft.....
