SPRANKS!

gluten-free vegan cookies?
i do that.
look:

with chocolate on top,
and little pinkie cutie sprankles!
i'm a opportunistic multitasker,
so if i've already got the oven going,
i've gotta take full advantage, and make alllll the treats.
and if that also means making some sweet things for my sweet thang?
well,
breezy is pretty sweet as it is,
but a cooke or two isn't ever gonna hurt nobody, y'feel me?
yeah!
and here we are, eatin' cooies.

GF COOKIES!

preheat your oven to 375℉
-
in a mixin' bowl, combine:
1 stick (8T) vegan butter;
1/2 tsp salt;
1 cup sugar (i used 50/50 big and small crystal sugars);
2 tsp vanilla.
cream it all up, and add in:
1 tsp ea baking soda and powder;
1/3 cup bob's 1:1 gf flour;
1/4 cup unsweetened dried small-flake coconut;
1 cup bob's all-purpose gf flour;
1 cup mama's gf almond blend flour;
1 tsp xantham;
2 T tapioca;
1/2 cup non-dairy yogurt;
1/3 cup non-dairy milk.
mix it up, make sure it's not too dry,
and semi-flatten 2" balls on a couple of baking trays.
bake 'em for like 10-11 minutes,
and let 'em cool completely before you drizzle some melted dark chocolate on top.
hey, neighbors-
if you're going to go through the trouble to make gluten-free stuff,
you may as well put spranks on top of chocolate on top of everything.
they look better, and i really think that makes them taste better, too.

we're lookin' at another 'nother couple of snow days dudes.
that means ANYthing can happen.
first things first, it meant i was shoveling all the snow off of my deck.
yup.
every so often, i look out there, and i see that i'm the worst.
y'know?
like: 'oh! that's three feet of snow up there....i should do something about it before
we add MORE feet of snow on top,
and break this whole Folk Life & Liberty Fortress so much worse than it already is!'
yeah.
i've got to do preparation for shoveling by shoveling in advance of the next shoveling?
shoutouts to march, i guess.
the woodsly goodness is a hard style, and it's not for everyone.
i doubt my people back in connecticut could hang.
they're just not built to endure an environment that wants to kick your A*
every bit as much as everything else does.
sure, as a bloodline, we suffer with the best of the sicilians-
that latent outcast island DNA, coupled with centuries of lingering post-catholic guilt
will have us lamenting the injustices of a disquiet lifespan until it's over.
it's the weather that does the rest of 'em in....
on top of all the hurt and the loss and the trials and tests,.
it's also gotta be cold??
and we gotta be buried halfway past the groundfloor windows with snow until may?
that's too much to bear.
but too much is the right amount,
and anyway that's my mutha-F*ing motto, bro.

i'm still waiting for my trophy,
but in the meantime, i'm gonna go clear a path to the oil tank,
so i don't actually freeze in this ancient castle of calamities;
never quiet, never soft.....
