BLONDIES!!

i made some treats.
heck, i make a LOT of treats.
it's like therapy or somethin'.
but these ones were especially special.
why?
because i wanted brownies, but, like, really i didn't, though....
so they're cocoa-less,
except for the vegan white chocolate chips.....
and those are more like vanilla cocoa buttery blops than chocolate, really.
yup.
i'm talking about blondies, bro.
i made some,
gluten free, and brown sugary, and pretty frickin' tasty, for the record.

it's melted white chocolate, and it's expert af.
yeah!
here's how i did it, so you can do it, too.
and you ca do it, for sure.
it was't even hard at ALL.

preheat your oven to 375℉

melt 1 stick vegan butter;

in a medium-sized mixin' bowl, combine:
1 1/4 cup light brown sugar;
1/2 tsp salt;
3 T grated cacao butter;
1/4 cup unsweetened non-dairy plain yogurt;
add the melted butts,
1 1/2 cups bob's all-purpose gf flour;
1/2 cup chick pea flour;
3 T tapioca starch;
1 tsp xantham gum;
1/4 cup bob's 1:1 gf flour;
2 tsp baking powder;
1 tsp baking soda;
1 cup non-dairy s'milk
2 tsp vanilla...
stir well, and fold in 1 cup vegan white chocolate chips.
tight.
spread it all in a greased brownie pan-
i used a 10" square, y'all use wha you've got,
but bake'em for thirty minutes,
and let 'em cool completely afterwards before cutting-
as you can see, i did some squares, then i halved 'em diagonally.
a ton of triangles of tastiness is fine by me, man.
i had 'em, we ate 'em, i liked 'em, and so did everyone else.
there's somethin' to be said for that.
i think it's this:
too much is the right amount.
yeah, that's it.
and i knew i could do more, so i did-
the melted chocolate on top was a nice touch.
like i just said- MORE flavor is always invited.
a little exxxtra cacao butter, a splash of vanilla, and a touch of s'milk to temper the chips,
and i had melty gooey white chocolaty glaze ready to go.
low heat, a non-stick pan, and patience are the other requirements.
easy.

i need to make things.
food is my foremost form for self-expression, meditation, and systemic sustenance.
that's no joke.
it's a genuine extension of who i am, and what i believe in.
plus, i get to eat it, which is pretty frickin' awesome, too,
since all that compassion, intention, invention, and caring goes straight back into my body,
and replenished itself at a cellular level.
i LOVE that.
in fact, it's kind of my favorite part.
every damned day, it's a necessary ingredient in feeling fulfilled.
i'm glad i've got a stove, and i'm thrilled that i've got the motivation,
determination, and consideration needed to be an active participant in my own
daily dose of determined do-goodery dietary dopeness.
i do what i do because i believe it's a better way.
it isn't easier, but it really isn't harder, either.
it's just What Is, and that's all there ever is;
never quiet, never soft.....
