NO-SHORTAGE-OF-HALLOWEEN-TREATS-VEMBER!

little cakes that look like b-holes,
with the crinkles and the divot and everything.

they're coconut-based, which means they taste good as heck,
but,
they're also covered in runny icing to look spooky,
which means they're just plain ol' cool, too.
uh-huh.
i love treats, and i love hallowe'en, and i love coconut,
so you can probably imagine how much i was psyched on these jauns, right?
right!!
plus they're gluten-free, just to continue to prove once again that i'm
a magical mystical force for considerate compassionate conscientious
inclusive vegan bakey makey hottness every day.
word the eff up to THAT, neighbors.
so,
here's the recipe, although you could likely just use mini muffin tins instead of
the twisty bumbum pan, if you'd rather.....

COCONUTCRINKLEBUNDTS!

preheat your oven to 350℉

in a medium-sized mixin' bowl, cream together:
1/2 cup (1 stick) vegan butter;
1/2 cup sugar;
1/2 cup coconut sugar;
1/2 cup unsweetened medium-flake coconut;
1/2 tsp salt;
1 tsp vanilla;
2 T coconut milk powder.
mix well, and add:
1/2 cup unsweetened plain coconut yogurt.
blend together, and stir in:
1 1/2 cups mama's coconut-based gf flour;
1/2 cup mama's almond-based flour;
1/4 cup bob's 1:1 gf flour;
2 tsp baking powder;
1 tsp baking soda;
1 cup coconut milk (the carton kind).stir well,
and disperse evenly into individual tins,
and bake for twenty-five minutes.....
kaBOOM, bro.
now you've got treats to spare, and coconut everywhere.
that's a F*ing win.

as for the icing? it's just food dye, powdered sugar, and s'milk.
easy easy.
i used green, and i regret it slightly.
i've always been a hallowe'en purist, avoiding purple and green normally.
i see why, again, after icing these.
womp womp.
they're expert, for certain,
but they could've been greenless and i'd have been happier.

i dunno if gluten-free sh!t is inherently better for you.
i do know that i can make it taste every bit as good as traditional wheat-based treats.
i'm feelin' myself about that for these last two months, for sure.
there's more fiber, more protein, and more diversity of flavor, for sure.
the texture can suck, but only if you don't know how to make it rad.
.....and making it rad is sort of my THING, y'know?
so that's not a problem.
i feel good, i feel great, i feel wonderful.
i'm baby steppin' my way to the future,
and i'm using a whole lot of xantham gum on my way there.
it's all really happening, all the time;
never quiet, never soft.....
