the stoniest herb-blazin' nugtards are SO psyched today.
meanwhile,
i'm just over here thinking about cookies,
and while i've got gluttonous ideas on my mind,
it's absolutely NOT because i have the munchies.
ha.
being excited about smoking weed just isn't my thing.
heck, most things aren't my thing....
but cookies?
yeah, man.
that's for sure a good thing.
y'ever have so much stuff on the counter that you actually cant help yourself,
and you start adding everything in sight into a bowlful of butters and sugars?
no?
really?
damn, neighbors,
that sh!t happens to me all the time.
this time around i started with salt, butts, sugar, and vanilla,
which i creamed up properly,
cookies are great because measuring can be fairly imprecise-
i used a stick of earth balance, a healthy pinch of salt, a splash of vanilla,
and i'd guess almost a cup of sugar....
and added in a cup of spelt four, bout the same of regular flour,
teaspoons of baking soda and baking powder,
a big shake of rolled oats, another 'nother one of flaked unsweetened coconut,
and a giant handful of teentsy-weentsy chocolate chips.
there was so much texture in that bowl,
but,
i could also very clearly see the small bags of pecans and almonds,
right there, within easy arms' reach.
guys,
was i really gonna NOT fire them in there?
ew.
c'mon.
what do you think i am?
some kind of wimpy cookie-crumblin' diaperbaby?
no way!
too much is the right amount,
and that's usually the deciding factor in all my cooking adventures.
so, now i had a whole mess of crawnchy bits, and thirsty grains and seeds or whatever,
so i needed to activate the mix just a little baby bit with some wetness.
y'all know about those individual lunch-style applesauce cup jauns?
because i've been steady representing on them as pre-measured egg-replacement units
since the single-digit 2000's.
real talk.
one unsweetened cuppa that, and the cookie scene became pure fluffy crisp-edged magic.
i baked them for thirteen lucky minutes in a 375 fahrenheit degree oven,
and cooled them off on a wire rack.
that's how it's always done, i believe.
anyway,
i ended up with something pretty special.

so much flavor,
so many elements,
such crawnch,
plus, they've got the soft and smooth applesauce-bossin' blossom of pectin and pulp
to puff 'em up and make the whole thing better than best.
cookies are so simple,
but they're so complex,
if you do 'em right.

what's up for today?
well, you know it's my only day off,
which usually implies a lot of baking.
and today is going to be pretty much the same as all the rest-
first, though,
i think crabtree and i are gonna spend a while trekking
up through the mountains of my neighborhood.
there's a trail i spotted in the rain earlier this week,
and i'm thinking it's high time, in drier weather, that we take a trip through the trees,
and see what we can see.
i'm grateful for the time i have to do the things i do.
it's all really happening,
and it's how we deal with it that makes the story interesting;
never quiet, never soft.....
