CINNAMONS!

first of the month?
you know what that means, right?
yeah.
cinnamon buns.
rules is rules, and you gotta follow the rules.
check it:

eight buns for the eighth month.
it's mostly the same recipe as always,
but with a little bit of toasted coconut this time.
mmhmm.
the oven was hot af.
400℉, turned down to 375℉ when the buns went in.
that's that HOT BOI DÜDI BOI SUMMER LOVIN'.
the centers were SO soft and syrupy and smooth and delicious.
the edges were crispy, and the bottoms were saturated with all that gooey goodness.
yep.
the brown sugary buttery cinnamon business melts and soaks into all the stuff.

preheat the oven to 375, or 400 with the turn down, bro.

melt 1/2 stick of vegan butter;
1 cup of non-dairy milk;
1 tsp vanilla.
let it cool a bit so it's not boiling death lava.

in your upright mixer, dough hookin' attachment in place, mix up:
1 cup king arthur bread flour;
2 cups king arthur flour;
1/2 tsp sea salt;
1/4 tsp cinnamon;
1/4 cup sugar;
1 pkg fast-actin' yeast;
1/4 tsp wheat gluten.
1/2 tsp bread machine yeast.
add the cooled but warm liquid and beat it all up together-
11 minutes of kneading, fifteen minutes of risin',
and a hard roll-out on a floured board.
you want a big rectangle?
we got a big rectangle.

hey! do you have cinnamon brown sugar middle mix ready or what?

jeez, you NEED it.
it's this:
1 cup dark brown sugar;
3 T toasted coconut;
1 tsp vanilla;
6 T vegan butter;
cinnamon, nutmeg, allspice, ginger, cloves...
spread it all out, leaving a margin on your big rectangle.
roll it, chop it in half, then in half, then in half....
that's eight, neighbors.
eight is enough.
and arrange 'em on a parchment-lined cast-iron pan, man.
the bake-up is 25-30 minutes, give or take, until the outside edges are brown and sultry.
you want that sultry bronze, bruh.
it's necessary.

and the you drizz' all over it.
mmhmm.
drizzlin' that thick sugary goop is the key to awesomeness.
it's just powdered sugar, non-dairy milk, and vanilla, dripped all over.

and then i also freaked it off with toasted coconut sprankles,
just to turn it up to eleven.
yeah.
buns on the first.
that's how you start the month right.
so, consider this month started right;
never quiet, never soft.....
