'BURGS!

regular american suppertime sandwiches!!
ummmm, what?
neighbors,
oh my goodness-
i'm on it,
and it is expert-
veggie burgers and fries on a monday night!!
yup.

early in the morning,
i had my all purpose flour and salt and yeast and yogurt and oil and water
and sugar and flaxmeal all kneaded up and rising hard,
while the wildly inappropriate weather whipped it's windy winter sauce
all along the edges of the Folk Life & Liberty Fortress.
homemade buns, bro.
once you've had 'em, the other other stuff just isn't the stuff anymore.
that's real.
measured, folded, scored, and baked to a golden shine-
all the goodness, split and ready for a sandwich worth writing home about.
guys-
lentil garlic veggie burgers are what's up right now.
five cloves of garlic?
uh-huh.
a handful of oats?
yep.
wheat gluten?
absolutely.
eyeballin' the best batch of fattieboombatty burger patties in at least a week?
you know how it goes.
you need some dry stuff, some wet stuff, and something to hold it together.
it's easy, really, as long as you don't make it too wet or too dry.
um.
actually, that's a whole lot like saying:
it's easy as long as you're a really lucky guesser.
ha. sorry friends.
i used a pound of cooked lentils,
and a half a cup of oats.
all that browned garlic, two sauteed shallots, a big rough chop of parsley,
a smaller just as rough chop of cilantro,
two big pinches of smoked salt,
two big glugs of olive oil,
sage and thyme and ground mustard,
lots of black pepper and TONS of GPOP.
plus a third of a cup of gluten,
and another couple cloves of raw garlic.
yeah.
garlic is good,
and too much is the right amount.
made in the morning, fried up in the evening,
and served on those big sexxy buns like a double-handful of the truth.
mmmmmmmmmm.
big pickle slices, and a hearty hump of slaw,
as well as baby lettuces, juicy tomato, and red onion?
that's what i'm talkin' about!
that slaw, man!
radishes, parsley, cilantro, scallions, carrots, and two kinds of cabbage,
with salt, pepper, and vegenaise for days!!!
i love slaw.
i really do.
that's why there's always exxxtra on the plate.
i need it, and if i know i've got it?
i have to have it.
friends-
spicy seasoned fries!!!!
don't judge too harshly, but i impulse bought a bag of 'em,
and baked 'em up while the buns were in the oven.
awww.
c'mon.
they're a shortcut, i know,
and i have been ever-so-slightly disparaging myself since i got them.
.....but,
they were F*ing delicious.
in the moment, on my plate, flowing freely towards my champin' chompers?
you'd best believe i had zero misgivings about dippin' them into that custom
homemade spicy smoked sriracha ketchup!

all in all, y'all,
that's a straightforward simple selection for supper.
being up early makes it SO easy to get things ready in advance.
in fact,
i've got salsa fresca already marinating for tonight's delights.
y'gotta let all those juices touch each other, kids.
that's how it gets especially delicious.
i love sharing meals with someone.
they almost seem to taste better when they're experienced with company.
that's why i'm glad for ampy-d.
she appreciates what i make,
and that makes me want to make it even more.
a synergistic escalation of excellence,
gratitude and generosity, striving together towards new limits.
i like the way that feels.
it's all really happening, boys and girls.
the good is good,
and the bad is everything else,
the best part about that is-
the bad can be discarded and disregarded,
and the good can get turned up to eleven,
and be totally mutha-'ucking great;
never quiet, never soft.....
