YO MAMA...

dear mom,

happy mothers' day!

word up,
today is that day, duders.
so don't forget to call your mother.
what am i doing about it?
well,
i called my ma, because that's the rules,
and i even texted all the other moms i know, too.
then,
i fired up the toaster oven, 
because, 
as i may have mentioned previously-
my weekend emergency propane scene is a rough one-
and so i hard-way'd my tiny hotbox into some new territory-
what's good on the plate this morning?
some early brunchy mama-style hottness, of course.

i did a thing!
i know it's a little early for brunch,
and you can bet your bottom-butt that from now until forever,
there won't be any mimosas over here.
nope.
rules is rules,
and drinking is still lame,
but, 
sandwiches are still the TRUTH.
yeah!!
frittatas are so easy to make vegan,
and so strange to bake in a toaster.
ha.
i had some buttery pan-toasted french bread,
and some baby spinach,
and some zesty spicy radishes, too.
mostly because that combo looks so nice,
and doesn't taste half bad, either...
but,
it's that yellow brick in the center that stole the show.
a splash of chia seeds, 
and two shakes of flaxmeal, 
with two tablespoons of flour, one of arrowroot, one of tapioca,
GPOP, ground mustard, turmeric, salt, black pepper, 
a quarter of a cup of onion, and a helathy triple glug of olive oil-
added to a brick of superfirm tofu, and food-processed into a pulp-
all of which is then activated and enriched with half an onion, 
three cloves of garlic, and two tablespoons'-worth of minced poblano pepper,
fried down to caramel-colored softness,
with nootch by the handful,
and parsley, and cilantro by the rough chopful, 
and a few scallions to sharpen up the edges with a bit more flavor.
i put it in mini foil loaf pans, because what the F* else fits in a toaster oven?
and i baked it at 325? for a good long while.
how long?
who knows??!
toaster oven timers are bullsh!t, 
and i was busy doing other stuff while they roasted.
but,
when it came out, 
it was fully firm, soft, and fairly fluffy, 
not to mention absolutely aromatic and expert in every way.
mmmmmmmmm.
that's when i put some oil-seared shaved mushrooms 
and yellow miniature tomatoes on top.
daaaamn that's the stuff.
with a drizzle of sriracha poppin' the profile up,
and adding the heat while also bringing the thunder?
yup.
it is indeed a happy day.
i LOVE good food,

i made this for me and ampy-d,
although neither of us are moms.
but,
i DID make it with all the mompieces i know in mind,
and maybe that's why it came out so good.
who can say for sure?
all i will declare is that it is F*ing great,
and i wish there were three more of them right now to shovel into my gullet.
sandwich week is elite,
and a week as full as this one,
with holidays and celebrations steady rockin' it 
defiitely makes me try even harder than usual...
and i always try my hardest.
that's just the thing, kids-
there is only room for MORE.
real talk.
making the most of it,
and then making just a little exxxtra.
that's our preferred method of interactive participation,
and it's all really happening right this actual minute;
never quiet, never soft.....
