oh man!
i do so love to eat tacos.
still not the crawnchers, though-
nope.
those 12 pack hobby kit craptards can forever eff right off.
when i say tacos,
i'm only talking about softies.
y'know- the foldovers.
fresh warm floppy flour roundies...
or corn, i guess, in a pinch,
if i'm feeling marginally authentic.
wheat is my jammie jam, however,
and so i mainly stick with those jauns.
last night,
(and on a tuesday no less)
it was time to get busy with the big business i've been craving.
i would've done a mexican monday,
but my buddy at the grocery store has been slippin',
and didn't have an avocado in sight.
that's poor planning on his part,
and privileged inconvenience on mine.
regardless,
i still had to wait until yesterday to do my thing.

the guacamole is super good.
the best part?
it was a tag team effort by ampy d and i.
all the hottness i've come to expect, in two stages of construction.
i had to fire in a bunch of chilis and sweet peppers,
and scallions, just to overly activate the excellence a little more.
i mean,
good is good,
but too much is the right amount.
i doo-do that caliente crap for my culo, kids.
salsa fresca is always a welcome addition to my table,
and this batch is a stellar example of excess.
roma tomato, vine-ripened tomato, tons of garlic, jalapeno, poblano,
yellow and red bell pepper, red onion, cilantro, tomatillos, GPOP,
salt, pepper, and a whole lotta lime juice.
mmmm. mmmmmm. MMMMMM.
the usual refried activation was ready too.
with ho'sauce and chilis and onions, buttery blops and nootchy scoothches,
they were resplendent in browns, bro.
the lady like the beans, so the beans are what the lady shall have!
i'm a considerate F*ing gentleman, y'know?
so,
there were blops, and blarps, and chunky dollops-
what else was poppin' off on the plates?
i dropped mixed shredded baby lettuces on some,
sliced up golden grape tomatoes on others,
and cilantro and scallion sprankles everywhere!
guys,
rules is rules,
and if you ain't sprankin' you ain't really eatin'.
that's the truth.
you like those thinny-thin-thin cukes?
word up.
nothing calls out the freshness like a coolwater crisp cucumber.
for serious.
the biggest big action, when all was said and done,
were the two main course creations that provided the main meat
of these meatless meisterwerks.

*broth-boiled soft cubes of sweet potato, with that delicious sopa soaked in.
expert!
coupled with seasoned roasted chick peas,
and tossed as a pair into an oiled pan for just a bit more char on one side???
c'mon,.
that's some savage stormswept tastiness right there.
so simple, but so elite.
i used twice as much bouillon as water, so the swee'taters really slurped up
the sensational sauce, and imparted a bit by proxy to the beans.
rad.
and as if i wasn't already pigging out like a pro,
i made another 'nother tasty piece in another 'nother pan-

*dry-fried tofu strips, seared with super-smoky seasoned sexxxiness.
smoked paprika, oregano, basil, GPOP, onion strips, red chili,
cumin, black pepper, a splash of soy to sake 'em loose, and olive oil to finish 'em.
daaaaaamn.
i love it when i'm improvising, and everything touches everything,
and one thing leads to another and before too long,
there's a hedonistic humplestiltskin orgy happening in my mouth.
WOOOOOOOO.
how many tacos is the perfect number?
MORE.
definitely.
and more than in the picture, for sure.
i'm not afraid to get busy on a big platter of vegetable matter,
and make the magic happen in every direction.
limes make it all so much better, too.
really.
when that first citrus note, freshly squeezed onto the tops of each,
hits your palate like a clarion call to arms for every tastebud to answer?
so DOPE.
i freaked it off with different combinations in each one,
and i was happy with every single style.
all the good things all went together like taco voltron,
no matte which bits went in where.
i love a good meal,
and i love a successful pig-out glutton session.
it doesn't take a lot to lighten up a lousy day,
but when it's this bright a beacon of big barbarian berserker bean business?
i can't help but overindulge.
good things on a plate.
that's what i look forward to;
never quiet, never soft.....
