FRAISE FRIDAY!!!

what?!
it's friday?
WOOOOOO!!!!
friends,
i made a pie.
mmhmmm.
my custom crust remains a marginally guarded professional trade-secret,
but suffice to say,
i've been freakin' it off a tid and a tad,
and the results are lookin' pretty flippin' expert.
also,
i have ampy-d and her elite hair braiding skills,
which i've put to great use and impressive effect on tripled strips
of my proprietary pastry hottness.
......yeah.
neighbors,
how about we go ahead and check the teleport:

strawberries on strawberries on strawberries.
that's real.
two quarts of the stuff, in fact.
why?
you know why-
because too much is the right amount.
i stewed up some compote-
a quart of sliced jauns, lime juice, a shake of regular sugar, a splash of vanilla,
a tinier splash of lemon extract, a shake of powdered sugar,
and the zest of two limes-
(there's a lot of strawberry flavor to contend with, so the lime needs to be prominent)
that's predictably a very wet pulpy potful,
so i drained some of the strawberry-lime sauce,
added in some starch, (about three tablespoonsful),
whisked that slurry together,
and thickened the heck out of that sauce!
while that was cooling,
i cut out a pastry circle, and stuffed it in a pan,
which i filled with another 'nother quart of sliced strawberries!
word up.

that's what's up!
pouring the puree over the top, letting it fill in all those crevices and crannies,
and drippin' the last of that zesting lime lint on top was a very enjoyable activity,
but the top was where the pretty princess party happened.
uh-huh.
stars and circles and hearts of two sizes!!!
awwwww.
so kyoooot!!
.....and that braid!!
c'mon.
with a few sprankles of raw sugar,
and a long-lasting tour of the oven,
until the berry business was THICK,
and the crust was golden....
yuuuuuuuuuuuup.
when it's time to get fresh,
it's time to activate that crispy, flaky crawnchy crunchin' jammie-jam-filled flavor
all the way from the tippity-tip-top to the bottom and back again.
strawberry lime, duders.
good stuff, stuffed inside of great stuff, taking it to eleven with every last bite.

treats.
treats are what i'm on about.
guys,
i had leftovers last night.
uhmmmm,yeah.
MORE tacos.
two nights' worth of mixed bits, hucked into tortillas,
and hammered down my gullet.
luckily,
treats saved the day.
a few flaps of fiesta never hurt anybody, even on the third day in a row....
but,
treats, sweets, sugary superdelicious delights, and straw-F*ing-berries
made the repeats less important than the fresh-to-death red wedges i couldn't stop
shoveling into my mouth.
treats on treats,
fruit and citrus, and that flaky faustian deviltry.
i do what i do,
and i do it as hard as i can;
never quiet, never soft.....
