TREATS!!!

mmmmm.
cake!
anytime is a great time for cake, but the first of the year is a perfect time
to slice off a slab of sugary crumb and frosting,
and stuff your head with the stuff that dreams are made of-
dudes!
my rabbit rabbit january cake scenario is tiptop notch!

COCONUT snow day WIZARD SH!T!!!
that's right, neighbors-
ANYthing can happen on a snow day,
and when it's also the new new and the first of everything?
man, c'mon-
you know it's gonna be a great big activated year of F*ing awesomeness.
mmhmm.
that cake?
well, for starters, it's awfully pretty isn't it?
yeah.
it is.
and the little red round sprankles make it SO kyooooot!!
it also just happens to be pretty freakin' expert in the flavor department, too.
it's one of those hand-mixed jauns, where it's not a lighter-than-air fluff-up-
nah,
it's more like a thick and hearty wedge of wonderful,
with allllll that very sofy, silky coconut frosting turning it up another 'nother other notch.
f'real, it goes to eleven, and it stays there for every last bite.
y'all can start the year however you'd like, but i'm not trying to have a weak beginning
any more than i want a tepid tomorrow or a watered-down weekend or anything else-
loud, fresh, hardness for my face, is the pace and intensity that i need,
and this cake delivers at full force.
you wanna make one like this?
sure thing-
it's easyish-
just do this:

COCONUT NEW YEAR CAKE!

preheat your oven to 360℉

grease a 9" springform pan
-
in a medium mixing bowl, combine:
1 stick ( 8 T ) vegan butter;
1/2 cup raw demerara sugar;
1/2 cup sugar;
1/2 tsp salt;
1 tsp vanilla.
cream that up into one well-mashed mess, and stir in:
1/2 cup coconut yogurt.
next, add:
2 1/4 cups flour;
1/4 cup tapioca starch;
1/2 cup fine flake unsweetened dried coconut;
1 tsp baking soda;
2 tsp baking powder;
1 1/4 cups carton-style coconut milk-
stir it all up to thoroughly mix it all into one grainy but consistent batter,
and spread it evenly into your springform pan-
bake this lil baby b for 30ish minutes, or until the center is solid and won't fall-
when it gets a few shallow cracks in the top, you'll know it's ready-

now you have to let it cool, and you have to flip it over before your frost it-
rules is rules, and you have to do that or it'll suck.
-the frosting was made with a whisk and a wish and a stand-up mixer, too...
2 cups of powdered sugar;
5 T vegan butter 1/2 tsp vanilla;
2 T finely-ground (as in: spice-grinder dusty) coconut flake;
1/4 cup non-dairy milk-
that's it, just whip it realllly really good, and the exxxtra coconutty fat
will make it get all sorts of fluffed the F* out.
i mean, you see that supersexxxy top, right?
well, that's what's up.
i'll say it again: my new froster-gun is expert as hell.

this cake is rich and thick and soft and sugary, and basically,
it's all the things i want to eat in a january cake.
it's not gonna help me firm up all my hibernation body,
but it is gonna nourish my soul-hole with sustenance and support-

i took the ornaments off the tree at the Folk Life & Liberty Fortress,
but i may just give it another lil minute to light my nights before
i dismantle the assembly-required artifice and stash it for another year.
i all-the-way undid the tree at AMPERSAND TATTOO.
i mean, c'mon, kid-
we're on some professional presentation over there.
it's a new year, a new time for big fun,
and a big ol' blast of bright light is beaming in through the clear window now.
it's all getting more open.
the floorplan,
my mind and my heart...
in fact, the only thing that's kind of hard to make space on is the schedule.
yeah.
time is short, but that P.M.A. is long and strong.
i'm gonna leave time here and there and everywhere for something that resembles
a real life in between waking and collapsing.
seriously, there are people who need my time,
and i need some time to not be needed,
and it's a necessity to make some big time, bed time, and hard time
for the hard styles and hot fire that flesh out the details of my every dang day-
it's all really happening, i just need help figuring out how to fit it all in;
never quiet, never soft.....
