a sandwich.

hey neighbors-
crabtree and i had a heck of a night.
he wanted to eat some shoes,
and waddle out into the driving rain and messy mud,
over and over,
unhappily dragging yours truly into the deep, dark, and dour droplets,
while he sort of considered pooping.
guys,
dogs and rain are not best friends.
or, at least, my little fella wasn't feelin' it,
and neither was i-
despite his recurring role as bedraggled wet-stepper throughout the evening.
i wanted to make something delicious, and exercise.
dogs and plans aren't too compatible, either.
i got some actual exercise in, too,
after chasing him, and my shoes,
through the halls and off the walls of the Folk Life & Liberty Fortress.
is that double exercise?
it just might be.
and dinner?
well,
you folks already know how much i love a good sandwich, right?
mmhmm.
i fired up somethin' pretty tasty-
a sorta one-stop shot at sandwich glory,
and i really enjoyed where i went with it,
and i really really enjoyed when it went into my face!

homemade multigrain (oat flour, ground farro, wheat, chia) pita?!
yuuuuup.
with a dollop of that vegan sour cream, and salt, and water,
all kneaded into something special.
yeah....that's it.
grilled up on my openly-flamin' stove,
and set aside for a minute to steam itself into supple softness.
dudes,
salad mixin' fixin's are always invited to my gyro parties.
that's no joke-
red cabbage, savoy cabbage, carrots, parsley, cilantro,
garden-plucked mint, lemon, and vegenaise.
crawnchy, crisp, simple, and seriously expert.
pickles are great on sandwiches.
for serious.
that tangy tingly briny shine puts all kinds of juicy juice to the big business...
...so that's why they're there, anyway.
you like those sausage slices?
thin discs of that spicy hottness, stirred up with some onion,
and really puttin' the moves on the taste level, taking it to eleven,
and that's before we cross the meridian to the other other side of the sandwich!!
i'm just sayin',
i dropped a heavy handful of seasoned thick french-style fries down,
and i let those potatoes do a lot of the hard work.
....really.
fries in 'guinis, pittsburgh-style, but on a variant gyro jammie-jam?
mmmmmmm.
i think i'm onto something here.
sliced-up seared herb-crusted seitan steaks are there to win the day,
and there's a kind of victorious viking victual reality that's realized through
the generous use of crisp-edged succulent wheaten glutes all up in this b!tch.
and when i say herbed, that's as in:
oregano, GPOP, basil, rosemary, sage, thyme, cayenne, ground mustard.
y'know?
herbs, man.
yeah.
sliced weirdie tomatoes, paper-thin shaved red onion,
and a generous ziggy-zaggler of sriracha complete the look.
i know, i know-
it's a lot of stuff in one place,
but, keep in mind:
too much is the right amount.
it's heavy, it's hearty, it came together fairly quick,
and it's just what a dank,wet, sh!t-salad soupbowl of rainy sunday nighttime needed.
i got it.

i do what i do,
even when it's inconvenient.
i guess that's how i can tell i'm not just dabbling.
like i already told you-
me and my little pup had a heck of a night,
and now,
we're having a heck of a morning, too.
he's all fired up without ampy d,
and i'm firing up the oven,
so that when she gets back from whatever weak-saucery she's working on,
we can enjoy a slice of something rad.
it's all really happening up here,
and there's sure to be more of it,
ready or like it or not;
never quiet, never soft.....
