stuffed.

oh snap!
when the new new pizza dough is poppin',
and it just happens to have some sort of cosmically-aligned awesomeness
causing a righteous rising over and over,
so that the gluten and the flavor and the yeasty beastliness of breadsly barbariansim
are all in order, and awaiting further instructions,
there's really only one thing to do:
MORE!
ha.
that's our style.
so,
since overdoing it is what we're all about,
and the ingredients were arranged in place,
i just took it where it needed to go-
and by that i mean: i took it to eleven.
check the new-new-pizza-time-type teleport:

under(inner)chee' and daiya shreds stuffed crust, with fried garlic sprankles!!
wu-to-the-miutha-effing-TANG, homeboy oh boy,
but ain't that some sexy pizza.
mmmhmmmm,
side one, on the left:
underchee', crushed tomatoes, daiya mozzarella, arugula, leeks, and molto garlic.
cheesy, saucy, bitter leafy bites, and smooth creamy green oniony goodness,
all combined for a superior slice,
and that's before the melty crust secrets get revealed.
expert!
side two:
white pie for your eye,
daiya and under chee's,
grilled leeks and grilled PEACHES!
guys,
that's some futuristic crackery indulgence,
but,
i even upgraded it a baby bit MORE,
and fired on some grilled endive!!!!!!!!
ultimate hottness was in F*ing full force-
and then,
because too much is the right amount,
we finished it with a sweetened white balsamic reduction glaze!!!!
holy sh!t, kids-
i have been to the mountain,
and it has peaches and sorcery and super-official big action bursting on top.

what's with the new dough?
well, i eliminated all fats from it, for starters.
secondly, i used three cups of flour, plus one cup of semolina flour,
and ~almost~ two cups of warm water,
with a tablespoon of flax and a teaspoon of sugar,
and yeast exploding upwards. and inwards, and also outwards,
from my usual twin-rise largesse on that end.
yup.
i LOVE pizza,
and i LOVE sharing it with the professional appreciators i've attracted over the years.
it tastes better when everybody is freaking out over it,
and i feel better overindulging when we're all excited.
that's the plan, tonight, tomorrow, and always-
active participation, and genuine enjoyment-
what else would even be the point?

i've got plans for me and mine,
and we're going to stuff ourselves with one hundred percent
of all the nutrients we can amass.
massive, man.
that's what's up.
family togetherness is good for you,
and when it's happening,
all the good things seem to fall in place.
i'm grateful for the time i have been given,
and for all these rad dudes who're right alongside me while it unfolds;
never quiet, never soft.....
