banh banh.

a good sandwich can make a good day great.
i believe that,
and i practice the fine craft of sandwich improvement regularly.
for serious.
i had a good day,
hangin' around, cookin', shoppin', chore-accomplishin',
serious crabtree-accompanied nature hikin', small art makin',
and dinnertime magic activatin'.
in fact,
we all got so much time-spanning done that by the time
we finished watching buffalo '66, we were all totally beat.
here's the thing-
dinner had ampy d and i pretty psyched.
i mean it.
we grazed on crap all day,
a sort of tandem day-off indulgence in doo-doo buttery bad-for-us-ness
that we could co-conspire to consume like a pair of naughty kids,
eating candy and popcorn and soda and fries (with KETCHUP)
ha.
a full-blown poor-person garbagefest wasn't gonna stop us from getting frisky
with a couple of crisp, clean, totally F*ing expert sanwiches, however.
no joke.
when it's time to get busy with the big kitchen business of a big action banh mi,
i'm your man, and i'm down to get the party started right away.

woooooooooooooord.
buttery toasted soft french bread is essential,
the rest is extrapolation on a theme,
and it's a whole new remix i'd love to have again.... and again and again!
shredded red cabbage for crawnch,
pea tendrils, avocado in place of pate',
paper-thin tiny cucumber slices,
dry-fried superfirm tofu,
fresh torn basil,
crispy homemade vegan sausage ,
cilantro and mint leaves,to put the spring roll refreshment to it,
and a little vegenaise to help those scallion sprankles stick.
BOOM.
that's a victory for my face,
and it's all the flavors i wanted, combined,
all at once.
naturally,
i couldn't just have a sandwich.
i mean, duders, i'm not some weak musty mustard seed, y'know?
no?
well, how about this then:
too much is the right amount,
and that meant, in this instance, that we needed more side dishes!
salt and pepper brussels sprouts, in a melty caramelized onion reduction.
minced onions, and oil, essentially evaporated into ethereal excellence,
and left to supply the much-need exxtra flavor to my brassica buds.
delicious.
three peppers, sausage chunks, and onions, all fried up and browned,
with scallions and fresh peppers. too, for textural variety,
in a GPOP'd brown rice stirfry-up?
yeah!!!
damn.
straight-up, it was like a crumbly fairground was happening on my tongue.
no complaints there, as no fairgoers were invited, only tastebuds.
and tamari-wilted organic bok choi.
so buttery, so salty, so rich and rewarding.
guys,
good sandwiches, and good sides,
took a pretty damned good day,
and took it to eleven,
before it took us to bed early.
ha.
it's all really happening, always.
there's no getting away from it, either-
only getting the most out of it,
or getting out of here because you've missed the whole point;\
never quiet, never soft.....
