ROCKBLOXXX!!!

cookies for breakfast?
c'mon, now-
not just breakfast....
i'm sayin',
if you're really all about that vegan treats life,
it's cookies for every meal.
yup.
more cookies is more expert,
and when it's time to get it poppin' in the mad food science laboratory
in this Folk Life & Liberty Fortress 's test kitchen,
i'm not about to let the cookie creations let you down.
ha.

i did make some of my patented proprietary namesake cookies,
and i put 'em right up with pride.
word.
ROCK BLOXXX are the truth, homies.
and these ones are very honest-to-goodness ready to rock your socks off.
peanut butter! chocolate chips! chocolate icing! oats! coconut!
dudes,
for serious-
these cookies bring some serious thump to the bass-boosted back-end
of this remote mountain vale.
ha!
i used chunky peanut butter, and i'm glad i did, too.
the peanut crankles throghout really turn up the hottness factor.

well,
this version goes a little like this,
and bear in mind that the beauty of these treats is the variations in the retelling-
-
1 stick butterish
1 cup sugar
2 tsp vanilla
1/2 tsp salt
-cream all that up,
and add:
6 oz unsweetened applesauce
3/4 cup chunky peanut butts
1 3/4 cups a.p. flour
1 tsp ea. baking soda and kapowpow
3/4 cup ground oats
1/2 cup ground coconut
-
boom.
that's it.
375F; 13 minutes; golfball-sized; flat-pressed;
true magic peanut bombardiers will result.

well, yeah, man,
clearly some of 'em have chocolate chips.
on the ones-
too much is the right amount.
i HAD to freak half the batch off with a little somethin' exxxtra.
rules is rules.
.......and that's not ganache, guys.
nope.
i went rogue on this one-
it's cocoa-powdered sugar icing, and it's dope.
two tablespoons of cocoa, half a teaspoon of vanilla, half a cup of powdered sug,
and a drippy droplet or te of soymilk to cream it out.
mmmmmmmmmmmmmm.
unchipped, i hit 'em with shaved chocolate;
chipped-up, they got rainbow sprankles.
i like variety.
that's no joke.
the stars?
well now.
snappy crisp chocolate sugar dough can't be wasted.
that'd be weak and lame and dumb.
since i'm not trying to feel like that,
i rolled and cut and pressed a dirty double-batch of that sh!t,
and dusted those jauns with sweetness,\
but only after i used some of this elite blueberry frosting i've been holding onto.
calling them expert is an understatement.
cookies are good for you,
but only if you know what's good for you.
this sort of baking makes me glad.
it's good to know something does;
never quiet, never soft.....
